It is amidst the rugged beauty of Ireland's Wicklow Mountains that Geraldine Kavanagh, Ireland's sole full-time forager, starts her day. With a basket in tow, wild botanicals hand-picked by Kavanagh come to form the backbone of Glendalough's aromatic slow-distilled gin. These botanicals, still fresh, then end up in the hands of Head Distiller, Ciarán “Rowdy” Rooney. Sorrrel, Peppercorns and Juniper, Elderflower and Candied Citrus Peel. With a palate that evolves and reflects the region's seasonal bounty, Glendalough's Wild Rose and Wild Botanical expressions are the perfect toast to the Garden of Ireland.
